If you’re anything like me, you love a good spread. Here are my top 5 tips for hosting a Cannabis Thanksgiving:

  1. Decorate a gorgeous table with leaves, pinecones, warm oranges, deep greens and burgundy. A great place to grab your decor is a Dollar Store!
  2. Have a warm apple pie-scented candle or warmer? Maybe nice vanilla and caramel or pumpkin spice? Whatever you like, light it up!
  3. Ask everyone to bring a 420-friendly dish – why do all the work yourself?
  4. Have options for those who love weed or need to drive and stay away from it, like mocktails and weed-free versions of your snacks and meals.
  5. Pick the right music to set the mood and atmosphere!

1. Pumpkin Spiced Cake With Weed

Made with fresh fall ingredients, cream cheese, pumpkin puree and a dash of cannabis!

Ingredients
  

CAKE

  • 2 larger eggs
  • 1 cup sugar
  • 1 cup pumpkin puree
  • 1/2 cup cannabis oil or regular canola oil
  • 2 tsp pumpkin pie spice
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt to taste

FROSTING

  • 6 oz cream cheese softened
  • 1/4 cup cannabis butter softened
  • 1 1/2 cups confectioners sugar
  • 1/2 tsp vanilla extract
  • 1/2 tsp salt

Instructions
 

  • Preheat oven to 350F. Line an 8×8-inch pan with aluminum foil and spray with cooking spray; set aside.
  • To a large bowl, add the eggs, sugar, pumpkin, oil, pumpkin pie spice, vanilla, and whisk to combine.
  • Add the flour, baking powder, baking soda, salt, and stir until just combined, don’t overmix.
  • Turn batter out into prepared pan, smoothing the top lightly with a spatula. Bake for about 35 to 40 minutes (I baked 36 minutes) or until center is set and a toothpick inserted in the center comes out clean or with a few moist crumbs, no batter.
  • Set cake aside on a cooling rack to cool completely before frosting it so the frosting doesn’t melt.

FROSTING

  • To a large bowl (or to the bowl of a stand mixer) add the cream cheese, butter, confectioners’ sugar, vanilla, salt, and whisk until smooth and fluffy or beat with an electric mixer (or use the paddle attachment of a stand mixer).
  • Turn frosting out onto cooled cake and spread into a smooth, even, flat layer using a spatula or knife.

Ingredients
  

  • 1 cup all purpose flour
  • 1 cup rolled oats
  • 1 can apple pie filling
  • 3/4 cups brown sugar
  • 12 tbsp cannabutter `
  • 6 honeycrisp apples or any apples you love, peeled and cut into small mini chunks
  • 1 tbsp cornstarch

Instructions
 

  • Preheat the oven to 350 F. Line a 24 cup mini muffin tin
  • In a medium sauce pan, melt cannabutter, apples, a dash of cinnamon, brown sugar, and 3 tbsp of water. Cook over medium high heat for 4-6 mibutes or until apples are very slightly softened.
  • In a small dish combine cornstarch and 2 tbsp of water. mix well, and then add to the pan whlie stirring continuously. Stir for a few minutes, and take off heat, let cool.
  • In a mixing bow combine flour, oats, brown sugar. Cut the butter into the flour mixture with a pastry cutter or your hands and it will look like crumbs.
  • Place the crust mixture into each mini muffin cup. Press along the bottom and sides to make a cup.
  • Place about 1 tbsp of apple filling in the crust, and then if there's any remaining crust mixture, sprinkle on top, add a little cinnamon if you like.
  • Bake about 15 minutes. Cool in the pan for 10 minutes.
    Drizzle with caramel sauce and whipped cream.

  • 1 1/4 cup all purpose flour
  • 1 cup milk
  • 2 large eggs
  • 1 pinch salt
  • 2 tbsp cannabis butter

Instructions
 

  • Combine all ingredients into a bowl and whisk until there are no more lumps and the mixture is a smooth batter.Set a frying pan over a medium heat then carefully wipe it with an oiled kitchen paper tissue.
  • Once the pan is hot and oiled, pour in your desired amount of pancake batter. Cook for 1 minute on each side, or until golden. Serve immediately or keep warm in the oven on low heat until the rest are finished cooking.

Ingredients
  

  • 1 cup strongly brewed coffee
  • 1/4 cup Pumpkin puree
  • 1 tbsp white granulated sugar
  • 1/2 tsp pumpkin pie spice
  • 1/2 tsp vanilla extract
  • 2 cups milk
  • 1/4 tsp ground nutmeg
  • 1 tsp cannabis oil

Instructions
 

  • In a medium saucepan over medium heat add the coffee, pumpkin, sugar, pumpkin pie spice, and vanilla extract. Heat for 3-5 minutes, or until hot, but not boiling.
  • While the coffee is cooking, add the milk to the frothing pitcher and place over medium heat.
  • When the temperature reaches between 120-150°F, you can begin to use the frother. Remove the pitcher from heat and continue to froth when the temperature reaches 160°F.
  • Divide the coffee mixture between two mugs and add the desired amount of cannabis oil.Using a spoon to hold back the foam, add the hot milk to each cup. Aim for a 2:1 milk to coffee ratio.Spoon the remaining foam into each mug. Top with freshly grated nutmeg as desired.

5. Cannabis Fried Chicken (or Turkey)

Traditionally, turkey is the way to go – but with cannabis, nothing is traditional and everything is wonderful!

Ingredients
  

  • 1 tbsp EACH: cayenne pepper, pepper,smoke paprika, mustard powder & salt
  • 1 litre buttermilk
  • 1 tbsp Buffalo hot sauce
  • 6 pieces Chicken drumsticks
  • 3 cups all-purpose flour
  • 1 tbsp corn starch
  • Canola oil for frying

Instructions
 

  • Place the chicken in a large bowl and toss with a half tablespoon each of cayenne, paprika, mustard powder, salt and pepper (you’ll use the remainder of these ingredients in a later step). Once finished, add the buttermilk and hot sauce to bowl.
    Marinate the chicken in the buttermilk for at least one hour, or up to 12 hours for maximum flavouring.
  • Double dredge the chicken like this:
    First remove the chicken pieces from the buttermilk and place them on a wire rack to allow the buttermilk to drip off. Keep the buttermilk mixture nearby. Once finished, combine the flour, corn starch and remaining cayenne pepper, paprika, mustard powder, salt, and pepper in a large bowl.
  • Next, dredge each piece of chicken in the seasoned flour and place on a separate wire rack until each piece of chicken is fully coated.
    Re-dip each piece of chicken into the buttermilk mixture (allowing the excess to drip off) and dip each piece in the seasoned flour to coat it for a second time, shaking off any excess flour
  • Heat canola oil to 360-375 F in a pan or deep fryer. Deep fry the chicken pieces for 6-10 minutes (until chicken is cooked through and golden brown).

How To Make Weed Edible Staples

If you’ve never cooked with cannabis before, then you’re in the right place. Below, you’ll find two recipes; one for cannabis butter, and the other for cannabis oil.

Both are fantastic to master – especially before Thanksgiving – but if you’re new, take your time and enjoy the process.

Cannabis Butter & Cannabis Oil Recipes

I always encourage at-home cannabis Chef’s to double or triple your batches of weed butter. Freeze them in individual ice cube trays, and use them whenever you need them!

When you’re down to one ice cube tray, that’s your sign to make another batch and freeze again.

Make Cannabutter Using The Best Recipe & Guide To Get Perfect Weed Butter!
Prep Time 10 minutes

Boiling & Cooling 3 hours

Equipment

  • 1 cookie sheet
  • 1 silicone spatula
  • 1 mixing bowl
  • 1 butter mould or ice cube trays
  • 1 sheet of tin foil to line the cookie sheet with
  • 1 portion of cheesecloth to strain residues
  • 1 large mason jar with seal tight lid
  • 1 large cooking pot

Ingredients
  

  • 1/4 - 1/2 oz cannabis flower
  • 1 cup butter unsalted or salted - you choose!

Instructions
 

  • Decarboxylate your weed by spreading the cannabis flower evenly on a cookie sheet with aluminum foil.
  • Place in the oven at 240F, for 40-45 minutes
  • Grind your cannabis until it's fine.
  • Place the dried cannabis in a large mason jar, add butter and seal the lid on top. 
  • Place your closed jar in cold water, in a cooking pot, and let it come to a boil - and keep it boiling for about 2-3 hours - watch carefully.
  • Let it cool down, and strain your butter with a cheesecloth into a bowl.
  • Pour into butter moulds and place into the fridge, or ice cube trays into the freezer so you have about 1 tbsp of cannabutter per ice cub compartment.

This recipe is a relatively easy recipe to make for beginners and cannabis chefs alike!

Making cannabis oil, especially if you haven’t done it before, requires a little time and patience but once you’ve got the hang of it, you’ll have thousands of recipes to choose from where an infusion is the perfect choice.

You can substitute whichever oil you like to create the same results.

Whether it’s baking, cooking or a delicious drizzle on a salad or baked potato – weed-infused oil is a must-have in every cannabis Chef’s kitchen.

Here’s how to make it properly:

  • Double Boiler
  • Mesh strainer or cheese cloth
  • Seal-tight container for oil

Ingredients
  

  • 1 cup olive oil
  • 1 cup ground cannabis decarbed.

Instructions
 

  • Heat oil and decarbed cannabis. 
    1) add oil and decarbed cannabis to double-boiler, slow cooker, or saucepan, and simmer on low for 2-3 hours. Make sure the temperature of the oil stays between 160-200ºF.
  • Strain and store the oil. Put mesh strainer or cheesecloth over container for oil and pour the oil/cannabis mixture through it. Do not squeeze it out—this will add more chlorophyll to your oil and make it taste more vegetal. Discard the plant material. The oil will have a shelf life of at least two months and can be extended with refrigeration.
