Things To Prepare

When cooking or baking with weed, you always need to prepare in advance. It’s not as simple as throwing a few ingredients together in a mixing bowl and calling it a day.

You’ll need to have some utensils and recipes ready to go such as:

  • hand mixer or stand mixer
  • parchment paper
  • measuring cups, spoons, spatula, cutting board, knives
  • cannabutter
  • cannabis oil 

1. Pumpkin and Pot Spiced Cake

Made with fresh fall ingredients, cream cheese, pumpkin and a healthy dose of cannabis to bring you the best of fall and weed together in a moist and delicious cake!

Ingredients
  

CAKE

  • 2 larger eggs
  • 1 cup sugar
  • 1 cup pumpkin puree
  • 1/2 cup cannabis oil or regular canola oil
  • 2 tsp pumpkin pie spice
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt to taste

FROSTING

  • 6 oz cream cheese softened
  • 1/4 cup cannabis butter softened
  • 1 1/2 cups confectioners sugar
  • 1/2 tsp vanilla extract
  • 1/2 tsp salt

Instructions
 

  • Preheat oven to 350F. Line an 8×8-inch pan with aluminum foil and spray with cooking spray; set aside.
  • To a large bowl, add the eggs, sugar, pumpkin, oil, pumpkin pie spice, vanilla, and whisk to combine.
  • Add the flour, baking powder, baking soda, salt, and stir until just combined, don’t overmix.
  • Turn batter out into prepared pan, smoothing the top lightly with a spatula. Bake for about 35 to 40 minutes (I baked 36 minutes) or until center is set and a toothpick inserted in the center comes out clean or with a few moist crumbs, no batter.
  • Set cake aside on a cooling rack to cool completely before frosting it so the frosting doesn’t melt.

FROSTING

  • To a large bowl (or to the bowl of a stand mixer) add the cream cheese, butter, confectioners’ sugar, vanilla, salt, and whisk until smooth and fluffy or beat with an electric mixer (or use the paddle attachment of a stand mixer).
  • Turn frosting out onto cooled cake and spread into a smooth, even, flat layer using a spatula or knife.

Ingredients
  

  • 1 cup strongly brewed coffee
  • 1/4 cup Pumpkin puree
  • 1 tbsp white granulated sugar
  • 1/2 tsp pumpkin pie spice
  • 1/2 tsp vanilla extract
  • 2 cups milk
  • 1/4 tsp ground nutmeg
  • 1 tsp cannabis oil

Instructions
 

  • In a medium saucepan over medium heat add the coffee, pumpkin, sugar, pumpkin pie spice, and vanilla extract. Heat for 3-5 minutes, or until hot, but not boiling.
  • While the coffee is cooking, add the milk to the frothing pitcher and place over medium heat.
  • When the temperature reaches between 120-150°F, you can begin to use the frother. Remove the pitcher from heat and continue to froth when the temperature reaches 160°F.
  • Divide the coffee mixture between two mugs and add the desired amount of cannabis oil.Using a spoon to hold back the foam, add the hot milk to each cup. Aim for a 2:1 milk to coffee ratio.Spoon the remaining foam into each mug. Top with freshly grated nutmeg as desired.

3. Cannabis Chicken Drumsticks

Delicious fresh chicken infused with cannabis BBQ sauce – a great fall evening meal that’s sure to please all of your buds!

Add some store-bought pumpkin pie, and some cinnamon-infused apple sauce for the complete meal.

Ingredients
  

  • 4 lbs chicken drumsticks
  • 2 cups cannabis bbq sauce
  • 2 tbsp brown sugar
  • 2 tbsp paprika
  • 2 tsp onion powder
  • 2 tsp garlic salt
  • 2 tsp salt

Instructions
 

  • Spread the chicken legs out across a baking tray and set them aside for now.
    Combine all of the remaining dry ingredients in a mixing bowl with a whisk to create a perfect rub.
  • Sprinkle the rub all over the chicken legs, and then use clean hands to rub the flavour into each piece.
    Once the rub is on, fire up the BBQ at a medium-low setting and give it a few minutes to preheat at 450°F.
  • When the barbeque is finished preheating, transfer the dry-rubbed legs to the grill, and spread them out for even heat distribution.
    Barbeque the chicken legs for 15-20 minutes, turning and applying layers of the thick sauce in between each flip.
    Once the chicken legs are crispy, transfer them to a clean serving tray, then place them on the table or counter so that everyone can dig in!
